Clean the Baby Octopus
Rinse the baby octopus under cold water to remove any grit or sand. Pat dry with a paper towel.

Prepare the Tofu
Cut the soft tofu into cubes, approximately 1-inch in size. Set aside carefully to avoid breaking.

Chop Aromatics
Finely mince the garlic and ginger. Slice the scallions into thin rings, separating the white and green parts.

Cook the Baby Octopus
In a large pot, bring water to a boil. Add the cleaned baby octopus and cook for about 2-3 minutes until they turn bright color. Drain and set aside.

Make the Sauce
In a small bowl, combine soy sauce, sesame oil, rice vinegar, chili paste, and honey. Mix well until all ingredients are blended.

Combine Tofu and Octopus
Gently add the tofu cubes and cooked baby octopus to the skillet. Pour the sauce over them and carefully toss to coat without breaking the tofu. Cook for another 2-3 minutes until heated through.
Serving

Transfer the baby octopus and tofu mixture to a serving bowl. Garnish with sesame seeds and chopped cilantro. Optionally, add the green parts of the scallions on top for extra color.
