Prepare the crust
Preheat your oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix until the crumbs are well coated. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.

Bake the crust
Bake the crust in the preheated oven for about 10 minutes, or until lightly golden. Remove from oven and let it cool while preparing the filling.

Make the filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the remaining 1/4 cup sugar, sour cream, and vanilla extract. Mix well until combined.

Add eggs
Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

Pour and bake
Pour the cheesecake filling over the cooled crust. Bake for 55-60 minutes, or until the center is set but still slightly jiggly.

Cool and chill
Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for 1 hour. Remove from the oven and refrigerate for at least 4 hours or overnight.

Serve
Once chilled, remove the cheesecake from the springform pan. Top with fresh berries before serving. Slice and enjoy!
