    Prepare the Dough

    In a large bowl, mix the flour, sugar, cocoa powder, salt, and cinnamon. Cut in the butter until the mixture resembles coarse crumbs. Add the wine, egg yolks, and water, mixing until a dough forms. Knead the dough on a floured surface for about 5 minutes, then wrap in plastic wrap and refrigerate for at least 1 hour.

    Roll Out and Cut Shells

    After chilling, roll out the dough to about 1/8 inch thickness. Use a round cutter to cut out circles (about 4 inches in diameter). Wrap each circle around a metal cannoli tube, sealing the edges with a bit of water.

    Fry the Shells

    In a deep frying pan, heat the vegetable oil to 350°F (175°C). Fry the wrapped dough for about 2-3 minutes, or until golden brown. Remove from oil and let cool on paper towels. Carefully slide off the metal tubes.

    Prepare the Filling

    While the shells cool, prepare the filling using ricotta cheese, powdered sugar, vanilla extract, and any desired flavorings (chocolate chips, candied fruit, etc.). Mix until smooth.

    Once the shells have cooled completely, fill them with the ricotta mixture using a piping bag or a spoon. Dust with powdered sugar before serving.
