    Prepare the Rice

    Start by cooking the rice according to the package instructions. Use a rice cooker or a pot with a lid to steam the rice until fluffy.

    Make the Sauce

    In a small saucepan, combine the soy sauce, mirin, and sake. Heat over medium heat until it begins to simmer gently, then reduce the heat and let it simmer for about 5 minutes until slightly thickened. Remove from heat and set aside.

    Prepare the Eel

    If using fresh unagi, grill the eel pieces over medium heat for about 3-4 minutes on each side until they are heated through and have a nice char. If using pre-cooked eel, simply heat them in the microwave or grill them briefly.

    Plate the Dish

    Once the rice is ready, fluff it with a fork and place it in the center of each serving bowl. Place the grilled eel pieces on top of the rice.

    Add Sauce and Garnish

    Drizzle the prepared sauce over the eel and rice. Sprinkle sesame seeds and finely chopped green onions on top for added flavor and garnish.

    Serve the Unagi Don warm, and enjoy with additional soy sauce on the side if desired.
