Nigiri Preparation Directions
1. Prepare the Sushi Rice
Begin by rinsing the sushi rice under cold water until the water runs clear. This removes excess starch and prevents the rice from being too sticky. Cook the rice according to the package instructions, typically using a rice cooker or stovetop method.
2. Season the Rice
Once the rice is cooked, transfer it to a large bowl. In a small saucepan, heat the rice vinegar, sugar, and salt over low heat until the sugar dissolves. Pour this mixture over the warm rice and gently fold it in to season the rice evenly. Allow the rice to cool to room temperature.
3. Prepare the Fish
While the rice is cooling, prepare the fish. Ensure all fish is sushi-grade and sliced into thin, even pieces. For the grilled eel, ensure it is already cooked and cut into appropriate-sized pieces.
4. Form the Nigiri
Wet your hands with a mixture of water and a little rice vinegar to prevent sticking. Take a small amount of sushi rice, about the size of a golf ball, and form it into an oval shape. Place a small dab of wasabi on top of the rice, and then gently press a slice of fish on top to adhere it to the rice. Repeat this process for all fish types.
5. Serve
