Prepare the Ingredients
Gather all ingredients. Slice the chicken breast into thin strips, the fishcake into rounds, the carrot into thin julienne strips, and chop the green onions finely.

Cook the Chicken
In a large pot, heat the toasted sesame oil over medium heat. Add the chicken strips and sauté until they are cooked through and lightly browned, about 5-7 minutes.

Season the Broth
Once the broth is simmering, add the soy sauce, mirin, and salt. Stir well to combine and let the broth simmer for another 5 minutes to let the flavors meld.

Cook the Udon Noodles
In a separate pot, bring water to a boil and cook the udon noodles according to the package instructions, usually about 8-10 minutes. Once cooked, drain and rinse under cold water to stop the cooking process.

Combine and Serve
Add the cooked udon noodles into the broth with chicken and vegetables. Gently stir to combine. Serve hot, garnished with chopped green onions on top.
