Prepare the Noodles
Bring a pot of salted water to a boil. Add the soba noodles and cook according to package instructions until al dente. Drain and set aside.

Cook the Pork
In a large skillet, heat the sesame oil over medium heat. Add the ground pork and cook until browned, breaking it apart with a spatula, about 5-7 minutes.

Add Aromatics
Add the minced garlic and grated ginger to the pork, cooking for an additional 2 minutes until fragrant.

Make the Broth
Pour in the chicken broth, soy sauce, chili oil, and sesame paste into the skillet with the pork. Stir well to combine and bring to a simmer.

Season the Broth
Taste the broth and season with salt and pepper as desired. Let it simmer for about 10 minutes to allow the flavors to meld.

Steam the Bok Choy
While the broth simmers, steam the bok choy until tender, about 5-7 minutes. Set aside.

Assemble the Dish
In serving bowls, add a portion of noodles, ladle the spicy broth with pork over the noodles, and top with steamed bok choy, chopped chives, and green onions.
