Beef Curry

Prepare the Beef
Cut the beef into bite-sized cubes and season with salt and pepper.

Brown the Beef
Add the beef to the pot and brown on all sides, about 5-6 minutes.

Add Vegetables
Stir in chopped carrots and diced potato, cooking for another 3-4 minutes.

Add Liquids and Spice
Sprinkle the curry powder over the mixture, then pour in the coconut milk and beef broth. Add soy sauce, stir well, and bring to a simmer.

Simmer
Reduce heat to low, cover, and let simmer for about 30-40 minutes until the beef is tender.
Crispy Gyoza

Prepare Filling
In a bowl, mix ground pork or chicken, chopped cabbage, green onion, minced garlic, minced ginger, soy sauce, sesame oil, and salt until well combined.

Fill Gyoza Wrappers
Place a gyoza wrapper in the palm of your hand. Put a teaspoon of filling in the center, moisten the edges with water, and fold the wrapper over to seal, creating pleats along the edge.

Cook Gyoza
In a skillet, heat 1 tablespoon of oil over medium-high heat. Place gyoza in a single layer and fry for 2-3 minutes until the bottom is golden brown. Add water to the pan (about 1/4 cup), cover, and steam for 5-6 minutes until water has evaporated.

Rinse Rice
Rinse the rice under cold water until the water runs clear to remove excess starch.

Cook Rice
In a pot, bring 2 cups of water to a boil. Add the rinsed rice, reduce heat to low, cover, and cook for about 15 minutes or until water is absorbed.
Salad

Prepare Salad Ingredients
In a large bowl, combine mixed greens, halved cherry tomatoes, and sliced cucumber.

Dress Salad
Drizzle the salad with olive oil and balsamic vinegar. Season with salt and pepper to taste, then toss to combine.
