Method
California Roll

Prepare Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Drain and let it sit for 30 minutes.

Cook Rice
Cook the sushi rice according to package instructions, usually in a rice cooker or on the stove with a 1:1 ratio of rice to water.

Season Rice
Once cooked, mix the rice vinegar, sugar, and salt in a small bowl until dissolved. Fold this mixture into the rice gently, being careful not to mash the grains.

Assemble Roll
Lay a nori sheet on a bamboo sushi mat, shiny side down. Wet your hands and spread a thin layer of sushi rice over the nori.

Roll Sushi
Using the bamboo mat, carefully roll the nori over the fillings, applying gentle pressure to form a tight roll.

Slice Roll
Slice the roll into 6-8 pieces with a sharp knife, wiping the knife with a damp cloth between cuts.

Garnish
Sprinkle sesame seeds on top for garnish.

Prepare Sushi Rice
Prepare sushi rice using the same method as the California roll.

Assemble Roll
Lay a nori sheet on a bamboo mat and spread a thin layer of sushi rice over the nori.

Add Fillings
Place tempura shrimp, cream cheese, and finely chopped scallions along the center of the rice.

Roll Sushi
Roll the nori tightly around the fillings, using the bamboo mat for support.

Slice Roll
Slice the roll into 6-8 pieces with a sharp knife.

Garnish
Drizzle spicy mayo over the top and sprinkle with sesame seeds.
Sea Steak

Marinate Tuna
Marinate the fresh tuna steak in soy sauce and sesame oil for about 15 minutes.

Cook Tuna
Preheat a skillet over medium-high heat and sear the tuna for 1-2 minutes on each side for rare, or longer to desired doneness.

Slice Tuna
Remove from heat, let rest for a minute, then slice thinly.

Serve with wasabi and pickled ginger on the side.
