Bento Box Preparation
- 1
Prepare the Steamed Rice
Rinse 2 cups of Jasmine rice under cold water until the water runs clear. Cook the rice according to your rice cooker’s instructions or on the stove by combining the rice with 2.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until all water is absorbed. Fluff with a fork and set aside.
- 2
Make the Teriyaki Sauce
In a small bowl, mix together the soy sauce, mirin, brown sugar, cornstarch, minced garlic, and minced ginger. Stir until the sugar and cornstarch are dissolved.
- 3
Cook the Chicken Teriyaki
Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the chicken portion and cook until browned on both sides. Pour the teriyaki sauce over the chicken and simmer for about 5-7 minutes until the sauce thickens and the chicken is cooked through. Remove from heat.
- 4
Prepare the Salad
In a large bowl, combine the mixed salad greens, sliced cucumber, and sliced avocado. Drizzle with sesame oil and season with salt and pepper to taste. Toss gently to combine.
- 5
Assemble the Bento Box
In a bento box or compartmentalized plate, place a serving of steamed rice in one section. Add the mixed salad to another section. In the final section, place the cooked chicken teriyaki. Sprinkle sesame seeds over the chicken for garnish.
