    Prepare the Roux

    In a large pot, heat the olive oil over medium heat. Whisk in the flour to create a roux, stirring constantly for about 15-20 minutes until it's a deep brown color.

    Cook the Vegetables

    Add the chopped onion, green bell pepper, and celery to the roux. Cook for about 5 minutes until softened. Stir in the minced garlic and cook for an additional minute.

    Add the Okra and Tomatoes

    Stir in the sliced okra and diced tomatoes, mixing well.

    Combine with Broth and Spices

    Pour in the chicken broth and add the bay leaves, cajun seasoning, salt, and black pepper. Bring to a boil, then reduce the heat to a simmer.

    Add Seafood

    After the gumbo has simmered for about 30 minutes, add in the blue crab meat and shrimp. Cook for an additional 10 minutes or until the shrimp are pink and cooked through.

    Serve

    Remove the bay leaves and serve the gumbo over cooked rice. Garnish with chopped green onions.
