    Mashing

    Heat 6 gallons of water to 165°F (74°C). Add the Pale Malt, Crystal Malt, and Roasted Barley. Maintain the temperature at 152°F (67°C) for 60 minutes.

    Sparging

    After mashing, sparge the grains with hot water until you collect around 6.5 gallons of wort.

    Boiling

    Bring the wort to a boil. Add 1 oz of Fuggles hops and boil for 60 minutes. Add the East Kent Goldings hops in the last 15 minutes of the boil.

    Cooling

    Cool the wort quickly to around 70°F (21°C) using a wort chiller.

    Fermentation

    Transfer the cooled wort to a sanitized fermentation vessel. Pitch the Scotch yeast and seal with an airlock. Allow it to ferment for 1-2 weeks until fermentation is complete.

    Bottling

    Once fermentation is complete, dissolve the priming sugar in a small amount of boiling water and add it to the beer. Bottle the beer and cap the bottles.

    Conditioning

    Let the bottles condition at room temperature for 1-2 weeks before refrigerating and consuming.
