Calamari Preparation

    Prepare the Calamari

    Rinse the calamari rings under cold water and pat them dry with paper towels. This will ensure they fry up crispy.

    Make the Breading

    In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder.

    Dip in Buttermilk

    Pour the buttermilk into a separate bowl. Dip each calamari ring into the buttermilk, allowing excess to drip off.

    Coat in Flour Mixture

    Immediately transfer the buttermilk-dipped calamari into the flour mixture, coating evenly. Shake off any excess flour.

Frying

    Heat the Oil

    In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

    Fry the Calamari

    Fry the coated calamari in batches, making sure not to overcrowd the pan. Cook for about 2-3 minutes or until golden brown and crispy.

    Drain

    Using a slotted spoon, remove the fried calamari and place them on a plate lined with paper towels to drain excess oil.

Marinara Sauce Preparation

    Sauté the Garlic

    In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

    Combine Ingredients

    Add the canned crushed tomatoes, dried oregano, salt, and black pepper to the saucepan. Stir well to combine.

    Simmer the Sauce

    Reduce the heat to low and let the sauce simmer for about 15 minutes, stirring occasionally. This will enhance the flavors.

    Finish with Basil

    Stir in the chopped fresh basil just before serving.
