Method

Prepare the Fries

    Preheat Oven

    Preheat your oven to 425°F (220°C).

    Cut Potatoes

    Wash and scrub the russet potatoes, then cut them into thick wedges.

    Season Potatoes

    In a large bowl, toss the potato wedges with olive oil, salt, and black pepper until evenly coated.

    Arrange on Baking Sheet

    Spread the potato wedges in a single layer on a baking sheet.

    Bake Fries

    Bake in the preheated oven for 30-35 minutes or until crispy and golden brown, flipping halfway through.

Prepare the Demi Glace

    Combine Liquids

    In a saucepan over medium heat, combine beef stock and red wine.

    Reduce Sauce

    Bring to a simmer and let reduce by half, approximately 20-25 minutes.

    Add Butter and Season

    Once reduced, stir in butter, and season with salt and black pepper to taste.

Assemble the Loaded Frites

    Drizzle Truffle Oil

    Once the fries are done baking, remove them from the oven and drizzle with truffle oil.

    Add Cheese and Bacon

    Sprinkle shredded cheddar cheese and crumbled bacon over the hot fries.

    Top with Boursin and Rosemary

    Dollop the boursin cheese on top and sprinkle with chopped rosemary.

    Drizzle Demi Glace

    Finally, drizzle the rosemary demi glace over the loaded fries.
