Method

For the Calamari

  1. 1

    Prepare the Calamari

Rinse the calamari rings under cold water and pat them dry with paper towels. This step is important to ensure they fry up crispy.

  2. 2

    Make the Batter

In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, paprika, and garlic powder. Mix well.

  3. 3

    Prepare the Eggs

In a separate bowl, beat the eggs until frothy. This will help the flour mixture adhere to the calamari.

  4. 4

    Coat the Calamari

Dip each calamari ring into the egg mixture, then into the flour mixture, ensuring they are fully coated.

  5. 5

    Heat the Oil

In a large, deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  6. 6

    Fry the Calamari

Fry the calamari in batches, cooking for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

For the Spicy Marinara

  1. 7

    Heat the Olive Oil

In a medium saucepan, heat the olive oil over medium heat.

  2. 8

    Sauté Garlic

Add the minced garlic to the pan and sauté for about 1 minute until fragrant. Be careful not to burn it.

  3. 9

    Add Tomatoes and Spices

Stir in the crushed tomatoes, red pepper flakes, dried oregano, salt, and black pepper. Bring to a simmer.

  4. 10

    Simmer the Sauce

Let the sauce simmer for about 10-15 minutes, stirring occasionally, until it thickens slightly.

  5. 11

    Finish the Sauce

Stir in the chopped fresh basil just before serving for added flavor.
