Method
Preparation
- 1
- 2
Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water (double boiler method) or in the microwave, stirring until smooth. Remove from heat and let it cool slightly.
- 3
Mix Sugar and Eggs
In a separate bowl, whisk together the sugar, large eggs, and egg yolks until the mixture is pale and slightly thickened.
- 4
- 5
Add Flour
Sift the all-purpose flour into the chocolate mixture and fold gently until just combined. Be careful not to overmix.
- 6
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.
Baking
- 7
Bake the Cakes
Place the ramekins on a baking tray and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.
- 8
Cool Slightly
Remove the ramekins from the oven and allow them to cool for about 1-2 minutes. Run a knife around the edges to loosen the cakes.
- 9
Serve
Invert each ramekin onto a plate, allowing the cakes to fall out. Serve immediately with a scoop of vanilla ice cream on top and fresh berries if desired.
