Preparation

  1. 1

    Prepare the Chicken

Preheat your oven to 375°F (190°C). In a large bowl, combine the olive oil, garlic powder, paprika, salt, black pepper, and red chili flakes. Add the chicken breasts and coat them well with the spice mixture.

  2. 2

    Sear the Chicken

In a large skillet over medium-high heat, add a little olive oil. Once hot, sear the chicken breasts for about 3-4 minutes on each side until golden brown. Remove from heat.

  3. 3

    Prepare the Vegetables

Chop the bell peppers and onion into bite-sized pieces. In the same skillet, add the vegetables and sauté for about 5 minutes until they are slightly softened.

  4. 4

    Combine and Bake

In a baking dish, layer the sautéed vegetables at the bottom, then place the seared chicken breasts on top. Pour the vegetable broth over the chicken. Cover the dish with aluminum foil.

  5. 5

    Bake

Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

Serving

  1. 6

    Garnish and Serve

Once cooked, remove the dish from the oven. Let it sit for a few minutes before serving. Garnish with fresh parsley and serve with lemon wedges on the side.
