Preparation

  1. 1

    Prepping the Chicken

Start with the chicken breast. Trim any excess fat and cut into bite-sized pieces.

  2. 2

    Marinating the Chicken

In a bowl, combine the chicken pieces with olive oil, minced garlic, paprika, salt, black pepper, and lemon juice. Mix well and let it marinate for at least 15 minutes.

Cooking

  1. 3

    Sautéing the Vegetables

In a large skillet, add a tablespoon of olive oil over medium heat. Add chopped bell peppers, onion, and zucchini. Sauté for about 5-7 minutes until they are tender.

  2. 4

    Cooking the Chicken

In the same skillet, push the sautéed vegetables to the side and add the marinated chicken pieces. Cook for 8-10 minutes or until the chicken is cooked through and has a nice golden color.

Finishing Touches

    Garnishing

Once the chicken is fully cooked, remove from heat. Stir in chopped fresh parsley and crumbled feta cheese. Mix gently.
