Dough Preparation

    Boil and Mash Potatoes

    Wash and peel the potatoes. Cut them into quarters and boil in salted water until tender, about 20 minutes. Drain and allow to cool slightly. Mash the potatoes until smooth.

    In a large mixing bowl, combine the mashed potatoes, flour, egg, and salt. Mix until a soft dough forms. Be careful not to overwork the dough to keep the gnocchi light.

    Shape the Gnocchi

    Turn the dough onto a floured surface and divide it into four equal portions. Roll each portion into a long rope about 1/2 inch thick. Cut the ropes into 1-inch pieces. Optionally, use a fork to create ridges on the gnocchi.

Cooking and Sauce Preparation

    Cook the Gnocchi

    Bring a large pot of salted water to a boil. Add the gnocchi in batches. Once they float to the top, cook for an additional 2-3 minutes. Remove with a slotted spoon and set aside.

    In a large skillet, melt the butter over medium heat. Add the sage leaves and cook until the butter is browned and the sage is crispy, about 3-4 minutes.
