For the Risotto

For the Filling

For the Breading

For Frying

Method

Preparing the Risotto

  1. 1

    Sauté the Onion and Garlic

In a large saucepan, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and minced garlic, and sauté until they are translucent, about 3-4 minutes.

  2. 2

    Add the Rice

Stir in the Arborio rice, mixing well to coat the grains with the oil, and cook for 1-2 minutes until the rice becomes slightly translucent.

  3. 3

    Add the Broth Gradually

Add 1 cup of the warm chicken or vegetable broth to the rice, stirring frequently. Allow it to be absorbed before adding the next cup. Repeat this process until all the broth is used and the rice is creamy and al dente, about 18-20 minutes.

  4. 4

    Finish the Risotto

Remove the saucepan from heat and stir in the grated Parmesan cheese, salt, and black pepper. Spread the risotto on a baking sheet to cool completely.

Forming the Arancini

  1. 5

    Prepare the Filling

Once the risotto is cool, take a handful of risotto and flatten it in your palm. Place a cube of mozzarella cheese in the center and then mold the risotto around it to form a ball. Repeat until all risotto is used.

Breading the Arancini

  1. 6

    Set Up Breading Station

In three separate bowls, place the all-purpose flour, beaten eggs, and breadcrumbs mixed with salt and black pepper.

  2. 7

    Bread the Balls

Roll each risotto ball in the flour, then dip it in the beaten eggs, and finally coat it in the breadcrumbs. Ensure each ball is fully coated.

Frying the Arancini

  1. 8

    Heat the Oil

In a large pot or deep fryer, heat 3 cups of vegetable oil to 350°F (175°C).

  2. 9

    Fry the Arancini

Working in batches, carefully add the breaded arancini to the hot oil. Fry for 3-4 minutes, or until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

  3. 10

    Serve

Serve the arancini warm, with marinara sauce or your favorite dipping sauce.
