Prepare the Potatoes
Peel and grate the potatoes using a box grater. Rinse the grated potatoes in cold water to remove excess starch, then drain and pat dry with paper towels.

Prepare the Calamari
In a bowl, season the calamari rings with salt and black pepper. Set aside.

Coat the Calamari
Dredge each calamari ring in flour, dip in beaten eggs, then coat with the potato shreds, pressing them gently to adhere.

Fry the Calamari
Heat vegetable oil in a deep fryer or large pot over medium heat. Once the oil reaches 350°F (175°C), carefully add the coated calamari in batches. Fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
