    Prepare the Chicken

    Season the chicken breasts with salt and black pepper. Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium heat. Cook the chicken for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove from the skillet and set aside.

    Cook the Mushrooms

    In the same skillet, add the remaining tablespoon of olive oil and butter. Add the shallots and garlic, sauté until translucent. Then, add the sliced mushrooms and cook until they are browned and tender.

    Make the Creamed Spinach

    In a separate pot, add the chopped spinach over medium heat, stirring until wilted. Stir in the heavy cream and half of the Parmesan cheese. Season with salt and pepper to taste. Cook for an additional 2-3 minutes.

    Combine Everything

    Return the cooked chicken to the skillet with the mushrooms. Pour the creamed spinach over the chicken and sprinkle with the remaining Parmesan cheese. Cover and simmer on low heat for about 5 minutes to meld the flavors.

    Serve the Chicken Florentine hot, garnished with additional Parmesan cheese if desired.
