Prepare the Filling

    Sauté the Onion and Spinach

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Then add the chopped spinach and cook until wilted, about 3-4 minutes. Remove from heat and let it cool.

    Mix the Filling

    In a mixing bowl, combine the cooled spinach and onion mixture with crumbled feta cheese, minced garlic, beaten egg, salt, black pepper, and grated nutmeg. Mix well until all ingredients are combined.

Assemble the Spanakopita

    Prepare the Phyllo Pastry

    Preheat your oven to 180°C (350°F). Grease a baking pan with some melted butter. Lay one sheet of phyllo pastry in the pan and brush it lightly with melted butter. Repeat this process, layering and brushing each sheet with butter until you have 5 sheets layered.

    Add the Filling

    Spread the spinach and feta filling evenly over the layered phyllo pastry in the baking pan.

    Top with Phyllo

    Layer the remaining phyllo sheets over the filling, brushing each sheet with melted butter just like before. Once all sheets are added, tuck the edges into the sides of the pan to seal the filling.

    Bake the Spanakopita

    Using a sharp knife, cut the top layers of phyllo into diamond shapes. Bake in the preheated oven for about 30-35 minutes, or until the pastry is golden brown and crispy.

    Cool and Serve

    Remove from the oven and let cool for a few minutes before cutting along the pre-scored lines and serving warm.
