Method

Marinade Preparation

  1. 1

    Make the Marinade

In a large bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Whisk together until well mixed.

  2. 2

    Marinate the Chicken

Add the cubed chicken breast to the marinade. Toss to coat the chicken evenly. Cover the bowl and let it marinate in the refrigerator for at least 1 hour, or preferably overnight for the best flavor.

Skewering

  1. 3

    Prepare the Skewers

If using wooden skewers, soak them in water for at least 30 minutes before using to prevent burning.

  2. 4

    Assemble the Souvlaki

Thread the marinated chicken pieces onto the skewers, alternating with cubed bell peppers and red onion.

Grilling

  1. 5

    Preheat the Grill

Preheat your grill to medium-high heat.

  2. 6

    Grill the Skewers

Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

Serving

  1. 7

    Serve the Souvlaki

Remove the skewers from the grill and let them rest for a few minutes. Serve the souvlaki with warm pita bread, a side of tzatziki sauce, and a sprinkle of fresh chopped parsley.
