Preparation of Vegetables

Slice the Eggplants
Cut the eggplants into 1/2 inch thick slices. Sprinkle with salt and let sit for 30 minutes to draw out moisture. Rinse and pat dry.

Prepare the Potatoes
Peel the potatoes and slice them into 1/4 inch thick rounds. Set aside.

Chop the Onions and Garlic
Finely chop the onion and mince the garlic cloves.

Prepare the Tomatoes
Chop the tomatoes into small pieces and set aside.

Chop the Parsley
Roughly chop the fresh parsley and set aside for garnish.
Meat Sauce Preparation

Cook the Meat
In a large skillet, heat olive oil over medium heat. Add the chopped onions and minced garlic, and sauté until translucent.

Add the Ground Meat
Add the ground beef or lamb to the skillet and cook until browned. Drain excess fat.

Add Eggs and Seasoning
Remove the béchamel sauce from heat and let cool slightly. Beat the eggs and mix them into the sauce. Season with salt and add grated cheese if desired.

Layer the Moussaka
In a baking dish, layer the sliced potatoes, followed by a layer of meat sauce, then a layer of fried eggplants. Repeat the layers and finish with béchamel sauce on top.

Bake the Moussaka
Preheat the oven to 180°C (350°F). Bake the assembled moussaka for 45-60 minutes until the top is golden and bubbly.

Let it Rest
Remove from the oven and let the moussaka rest for at least 30 minutes before serving. This will help the layers set.

Garnish with chopped parsley and serve warm.
