Preparation of Dips

    In a blender, combine 1 cup of chickpeas, 1/4 cup of tahini, 2 tablespoons of olive oil, 1 tablespoon of lemon juice, 1 garlic clove, and salt to taste. Blend until smooth and creamy. Transfer to a serving bowl.

    In a bowl, mix 1 cup of Greek yogurt, 1 grated cucumber, 2 tablespoons of olive oil, 1 tablespoon of lemon juice, 1 minced garlic clove, and salt to taste. Stir well and refrigerate until serving.

    Roast 1 eggplant in the oven until soft. Scoop out the flesh and blend with 1/4 cup of tahini, 2 tablespoons of olive oil, 1 tablespoon of lemon juice, 1 garlic clove, and salt to taste until smooth. Transfer to a serving bowl.
