Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water, sugar, and active dry yeast. Let sit for about 10 minutes, or until frothy.

    Make the Dough

    In a large mixing bowl, combine flour and salt. Create a well in the center, and add the activated yeast mixture and olive oil. Mix until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

    Let Dough Rise

    Place the dough in a greased bowl, cover it with a clean cloth, and let it rise in a warm place for 1 hour or until it doubles in size.

Filling Preparation

    Sauté Vegetables

    In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.

    Add Spinach

    Add fresh spinach to the skillet and cook until wilted. Season with nutmeg and black pepper. Remove from heat and let cool.
