    In a large mixing bowl, combine the ground pork, ground beef, and pork fatback. Mix well until the meats are evenly distributed.

    Add minced garlic, orange zest, fennel seeds, salt, black pepper, red pepper flakes, and dried oregano to the meat mixture. Use your hands to mix everything thoroughly until the spices are well incorporated.

Stuffing the Sausages
