    Preheat the Oven

    Preheat your oven to 200°C (400°F).

    Prepare the Fish

    Rinse the Lavraki under cold water and pat it dry with paper towels. Make three diagonal slashes on each side of the fish to allow even cooking and seasoning.

    Season the Fish

    In a small bowl, mix together olive oil, minced garlic, sea salt, black pepper, and chopped parsley. Rub this mixture all over the fish, including inside the slashes and cavity.

    Add Lemon and Herbs

    Slice the lemon into thin rounds and place them inside the cavity of the fish. If using, add fresh thyme for extra flavor.

    Prepare the Baking Tray

    Line a baking tray with parchment paper or lightly grease it with olive oil.

    Arrange the Fish

    Place the seasoned Lavraki on the prepared baking tray. If desired, add whole cherry tomatoes and capers around the fish for additional flavor.

    Bake the Fish

    Bake the fish in the preheated oven for 25-30 minutes, or until the flesh is opaque and flakes easily with a fork.
