    Season the lamb shanks with salt and black pepper on all sides. Allow them to sit at room temperature for about 30 minutes.

    Finely chop the onion, garlic, carrots, and celery to prepare for cooking.

    Sear the Lamb Shanks

    In a large heavy-bottomed pot or Dutch oven, heat the olive oil over medium-high heat. Add the lamb shanks and sear them until browned on all sides, about 8-10 minutes. Remove the shanks and set aside.
