Prepare the Syrup

Make the Syrup
In a saucepan, combine 1 cup of granulated sugar, 1 cup of water, and 1 tablespoon of lemon juice. Bring to a boil over medium heat, stirring until the sugar is dissolved.

Once boiling, reduce the heat and let it simmer for about 5 minutes. Remove from heat and stir in 1 teaspoon of vanilla extract. Set aside to cool.

Mix Dry Ingredients
In a separate bowl, whisk together 1 cup of granulated sugar and 1 cup of semolina.

Combine Mixtures
Gradually add the dry mixture to the warm milk, whisking continuously to prevent lumps from forming.

Add Eggs and Vanilla
In a bowl, beat 4 large eggs and 1 teaspoon of vanilla extract. Slowly add the egg mixture to the custard, stirring constantly until well combined.

Cook the Custard
Continue cooking the custard over medium heat, stirring constantly until it thickens, about 10-15 minutes. Remove from heat and let cool slightly.

Prepare the Phyllo
Preheat your oven to 350°F (175°C). Melt 1 cup of unsalted butter. Brush a baking dish with melted butter.

Layer the Phyllo
Layer half of the phyllo sheets in the baking dish, brushing each sheet with melted butter. Use about 10 sheets.

Pour the custard filling over the phyllo layers and spread evenly.

Layer the remaining phyllo sheets on top of the custard, brushing each one with melted butter as before. Use about 10 sheets.

Bake in the preheated oven for about 40-45 minutes, or until the phyllo is golden brown and crisp.
Finish and Serve

Add the Syrup
Remove the galaktoboureko from the oven and immediately pour the cooled syrup over it. Let it soak for at least 30 minutes before slicing.
