Wash and Cut the Potatoes
Wash the russet potatoes thoroughly to remove any dirt. Using a sharp knife, cut each potato into even strips about 1/4 inch thick to create fries.

Soak the Potatoes
Place the cut fries in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can use a thermometer to check the temperature.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture. This will help prevent the oil from splattering.

Fry the Potatoes
Carefully add a batch of the dried potato strips into the hot oil, making sure not to overcrowd the pot. Fry them for about 5-7 minutes, or until they are golden brown and crispy.

Using a slotted spoon, remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil.
