Preparation of Beans

    Soak the Beans

    Rinse the dried white beans under cold water. In a large bowl, soak the beans in 8 cups of water overnight or for at least 8 hours.

    Cook the Beans

    After soaking, drain the beans and transfer them to a large pot. Cover with fresh water and bring to a boil. Reduce heat and simmer for about 1 to 1.5 hours until the beans are tender. Drain and set aside.

Cooking the Fasolia

    Sauté Vegetables

    In a large pot, heat 1 cup of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Then add the minced garlic and diced carrot and cook for another 3 minutes.

    Add Tomatoes and Bell Pepper

    Stir in the diced tomatoes and bell pepper. Cook for about 5-7 minutes until the vegetables are softened.

    Combine all Ingredients

    Add the cooked beans to the pot. Stir in the cumin, paprika, salt, and black pepper. Mix well to combine all ingredients.

    Simmer the Dish

    Reduce the heat to low, cover the pot, and let the fasolia simmer for 20-25 minutes, stirring occasionally. Adjust seasoning as needed.

    Finish with Parsley

    Once the fasolia is cooked and flavorful, stir in the chopped parsley. Remove from heat and let it sit for a few minutes before serving.
