Method

Making the Pita Bread

    Activate Yeast

    In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until foamy.

    Mix Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour and salt. Mix well.

    Combine Ingredients

    Make a well in the center of the flour mixture and add the foamy yeast mixture and olive oil. Stir to combine until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

    First Rise

    Place the kneaded dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

    Shape the Pitas

    Punch down the risen dough and turn it out onto a floured surface. Divide into 8 equal pieces and shape each into a ball. Flatten each ball into a disc about 1/4 inch thick.

    Cover the discs with a damp cloth and let them rest for about 30 minutes.

    Preheat the Oven

    Preheat your oven to 475°F (245°C) and place a baking stone or a baking sheet inside to heat.

    Bake the Pitas

    Carefully place the rested pita discs onto the hot baking stone or sheet. Bake for 5-7 minutes until they puff up and turn lightly golden.

    Cool the Pitas

    Remove the pitas from the oven and let them cool on a wire rack.

Optional Toppings

    Prepare Toppings

    While the pitas are baking, you can prepare your toppings by mixing olive oil, za'atar seasoning, and sesame seeds in a small bowl.
