Preparing the Filling

In a saucepan, combine 1 cup of rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes until rice is cooked. Set aside.

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes.

In a large mixing bowl, combine the cooked rice, sautéed onions, ground lamb or beef, parsley, mint, chopped tomato, salt, black pepper, and cinnamon. Mix well until all ingredients are evenly combined.

Prepare the Grape Leaves
If using jarred grape leaves, rinse them under cold water to remove excess salt. If using fresh leaves, blanch them in boiling water for about 2-3 minutes until tender.

Take one grape leaf, vein side up, and place about 1-2 tablespoons of the filling near the stem. Fold the sides over the filling and roll tightly from the stem end to the tip. Repeat with remaining leaves and filling.
