    Wash and chop the bell peppers, zucchini, and red onion into bite-sized pieces.

    In a large skillet, heat the olive oil over medium heat.

Cooking

    Add the chopped bell peppers, zucchini, and red onion to the skillet. Sauté for about 5-7 minutes, until they are tender.

Assembling the Burritos

    Warm the flour tortillas in a separate skillet or microwave until pliable.
