Method
Chips Preparation
Cut the Tortillas
Stack the corn tortillas and cut them into wedges (quarters) to form chip shapes.
Heat the Oil
In a large frying pan, heat the vegetable oil over medium-high heat until it shimmers.
Fry the Chips
Carefully add the tortilla wedges to the hot oil in batches, frying until they are golden brown and crispy, about 2-3 minutes per batch.
Drain and Season
Remove the chips with a slotted spoon and drain on paper towels. While still hot, sprinkle with salt to taste.
Salsa Preparation
Mix the Ingredients
In a mixing bowl, combine the diced tomatoes, onion, cilantro, jalapeño, lime juice, and salt.
Adjust Seasoning
Taste the salsa and adjust the seasoning with additional salt or lime juice, if needed.
