Marinate the Steak

Prepare Marinade
In a medium bowl, whisk together olive oil, lime juice, garlic powder, cumin, chili powder, salt, and black pepper.

Marinate Steak
Place the flank steak in a resealable plastic bag or shallow dish and pour the marinade over the steak. Seal or cover and refrigerate for at least 1 hour (or up to overnight for best results).
Sauté Vegetables

Prepare Vegetables
Slice the bell peppers and onion into thin strips.

Sauté the Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced bell peppers and onion, and sauté for about 5-7 minutes until they are tender and slightly charred. Remove from skillet and set aside.

Once rested, slice the steak against the grain into thin strips.
Assemble and Serve

Warm the Tortillas
In a dry skillet, warm the flour tortillas over medium heat for about 30 seconds on each side until pliable.

To serve, place some sliced steak and sautéed vegetables onto each tortilla. Top with sour cream, salsa, and shredded cheese as desired.
