    Wearing gloves, remove the stems from the habanero (or ghost) peppers. If you prefer a milder sauce, you can remove the seeds as well.

    Chop the Vegetables

    Finely chop the garlic cloves, carrots, and onion (if using) to ensure they blend smoothly into the sauce.

Cooking

    Cook the Vegetables

    In a medium saucepan, combine the chopped garlic, carrots, and onion. Add a little water to prevent sticking and sauté over medium heat for about 5-7 minutes until softened.

    Add the cooked vegetables, habanero (or ghost) peppers, white vinegar, lime juice, salt, and sugar to a blender. Blend until smooth.
