    Prepare the Ingredients

    Wash the habanero peppers thoroughly. Remove the stems and cut them in half, making sure to wear gloves to protect your hands from the heat. Peel and chop the garlic cloves, onion, and carrots.

Cooking

    Cook the Vegetables

    In a medium saucepan over medium heat, add a small amount of oil. Add the chopped onions and carrots, and sauté until the onions become translucent and the carrots are tender, about 5-7 minutes.

    Add Peppers and Garlic

    Add the prepared habanero peppers and garlic to the saucepan. Continue to sauté for another 3-4 minutes until the garlic is fragrant.

    Add Vinegar and Seasoning

    Pour in the apple cider vinegar, lime juice, salt, sugar, and black pepper. Stir to combine, then bring the mixture to a simmer.

    Simmer

    Reduce the heat to low and let the sauce simmer for about 15 minutes, allowing the flavors to meld and the sauce to thicken slightly.

Blending

    Blend the Sauce

    Remove the saucepan from heat and let it cool for a few minutes. Carefully transfer the mixture to a blender and blend until smooth. If the sauce is too thick, you can add a little water to reach your desired consistency.

Storing

    Store the Hot Sauce

    Pour the blended hot sauce into a sterilized glass bottle or jar. Seal tightly and store in the refrigerator. The flavors will continue to develop over the next few days.
