Fries Preparation

    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips for fries.

    Fry the Potatoes

    In a large pot, heat the vegetable oil over medium-high heat. Once hot, carefully add the potato strips in batches and fry until golden brown and crispy, about 4-5 minutes per batch. Remove fries and drain on paper towels, then sprinkle with salt.

Carne Asada Preparation

    Marinate the Steak

    In a bowl, combine olive oil, lime juice, minced garlic, cumin, chili powder, salt, and pepper. Add the flank steak to the marinade, ensuring it is well coated. Cover and refrigerate for at least 1 hour, preferably overnight.

    Cook the Steak

    Preheat a grill or skillet over high heat. Remove the steak from the marinade, letting the excess drip off. Grill the steak for about 5-7 minutes on each side for medium-rare, or cook to your desired doneness. Let it rest for 5 minutes before slicing thinly against the grain.

Cheese Sauce Preparation

    Make the Roux

    In a saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for 1-2 minutes until bubbly but not browned.

    Add Milk and Cheese

    Gradually whisk in the milk, ensuring no lumps form. Cook until the mixture thickens, about 3-5 minutes. Stir in the shredded cheddar cheese, salt, and pepper, continuing to stir until the cheese has fully melted and the sauce is smooth.

Assembly

    Assemble the Dish

    On a large serving plate, layer the hot fries. Top with sliced carne asada, then pour the cheese sauce generously over the top. Add sour cream, chopped green onions, and sliced jalapeños as desired.
