    Prepare the Filling

    In a mixing bowl, combine the shredded cheese, cooked chicken (if using), chopped onions, ground cumin, and salt. Mix well and set aside.

    Prepare the Sauce

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Stir in chili powder and diced tomatoes, and cook for another 2-3 minutes. Add the enchilada sauce and simmer for 5 minutes. Remove from heat.

    Assemble the Enchiladas

    Preheat your oven to 350°F (175°C). Take a corn tortilla, fill it with about 1/4 cup of the filling, and roll it tightly. Place the rolled tortilla seam-side down in a greased baking dish. Repeat until all filling is used.

    Top with Sauce

    Pour the prepared sauce evenly over the rolled enchiladas in the baking dish. Make sure they are well covered.

    Bake the Enchiladas

    Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.

    Serve and Enjoy

    Remove the enchiladas from the oven and let them cool for a few minutes. Serve hot, topped with sour cream, chopped cilantro, and sliced jalapeños if desired.
