Preheat the oven to 400°F (200°C). Spread the sliced mushrooms and broccolini on a baking sheet. Drizzle with a little olive oil and season with salt and pepper. Roast for 20-25 minutes or until tender and slightly charred.

In a large pot, bring salted water to a boil. Add whole wheat penne and cook according to package instructions until al dente. Drain and set aside.

In a large mixing bowl, combine the cooked penne, roasted mushrooms, chickpeas, charred broccolini, and oven-dried tomatoes. Drizzle with chili oil and mix well.
