Method

Preparation of Mousse

  1. 1

    Melt the Chocolate

Chop the white chocolate into small pieces and melt it in a heatproof bowl over a pot of simmering water (double boiler method) until smooth. Remove from heat and allow it to cool slightly.

  2. 2

    Whip the Cream

In a large mixing bowl, whip the heavy cream until soft peaks form. Be careful not to overwhip.

  3. 3

    Beat Egg Whites

In another bowl, whip the egg whites until they are frothy. Gradually add the granulated sugar and continue to beat until stiff peaks form.

  4. 4

    Combine Mixtures

Gently fold the melted chocolate into the whipped cream until combined. Then fold in the whipped egg whites in batches, being careful not to deflate the mixture.

  5. 5

    Chill

Spoon the mousse into serving dishes and refrigerate for at least 2 hours, or until set.

Serving

Just before serving, wash the mixed berries and pat them dry. You can slice the strawberries if desired.

  2. 7

Top the chilled white chocolate mousse with fresh berries and garnish with mint leaves. Enjoy!
