Frittata Preparation

    Preheat your oven to 375°F (190°C).

    Sauté Vegetables

    In a large oven-safe skillet, heat olive oil over medium heat. Add broccoli florets and sauté for about 3-4 minutes until slightly tender. Add halved cherry tomatoes and cook for another 2 minutes.

    In a bowl, whisk together eggs, milk, salt, and black pepper until well combined.

    Combine and Cook

    Pour the egg mixture over the sautéed vegetables in the skillet. Sprinkle crumbled chèvre cheese on top. Cook for about 2-3 minutes on the stove until the edges begin to set.

    Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the frittata is puffed and set in the center.

    In a large bowl, combine mixed greens and sliced cucumber.

    In a pot of salted boiling water, cook baby potatoes for about 10-12 minutes, or until fork-tender. Drain and let cool slightly.

    Toss cooked potatoes with olive oil, garlic powder, salt, and black pepper. Spread on a baking sheet and roast in the oven at 375°F (190°C) for 15-20 minutes until golden and crispy.
