Flan Base Preparation

    Blend Peaches

    In a blender, puree the peaches until smooth. Set aside.

    Combine Ingredients

    In a large bowl, whisk together the pureed peaches, milk, heavy cream, sugar, eggs, vanilla extract, and a pinch of salt until well combined.

    Bake Flan

    Pour the mixture into a flan mold or individual ramekins. Place them in a baking dish filled with hot water (water bath) and bake at 350°F (175°C) for about 45-50 minutes or until set. Let cool completely in the refrigerator.

Crème Anglaise Preparation

    Heat Ingredients

    In a saucepan, combine the heavy cream, milk, and split vanilla bean (or vanilla extract) over medium heat. Heat until just simmering.

    Whisk Egg Yolks

    In a separate bowl, whisk the egg yolks and sugar until pale and thick.

    Combine and Cook

    Slowly pour the hot cream mixture into the egg mixture, whisking constantly. Return to the saucepan and cook over low heat until thickened (coats the back of a spoon). Strain through a sieve and cool.

Vanilla Whip Preparation

    Whip Cream

    In a bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.

Serving

    Plate the Flan

    To serve, unmold the flan onto a plate and drizzle with crème anglaise. Top with a dollop of vanilla whip.
