Method

Preparation

    Make the Potato Cakes

    Boil potatoes until tender, then mash. Mix with egg, flour, green onions, salt, and pepper. Form into cakes and refrigerate for 30 minutes.

    Roast the Peppers

    Preheat oven to 400°F (200°C). Cut peppers in half, remove seeds, and place on a baking sheet. Drizzle with olive oil and salt. Roast for 20 minutes until soft.

    Wilt the Greens

    Heat olive oil in a pan, add minced garlic. Sauté for 1 minute, then add greens. Cook until wilted, seasoning with salt and pepper.

    Prepare the Bérnaise Sauce

    In a saucepan, melt butter. In another bowl, combine minced shallots, white wine vinegar, and tarragon. Heat over low until shallots are soft. Whisk in egg yolks until thickened, then slowly drizzle in melted butter while whisking. Season with salt and pepper.

    Crispy Capers

    Heat olive oil in a small pan. Add capers and fry until crispy. Drain on paper towels.

    Cook the Salmon

    Season salmon fillets with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook salmon for 4-5 minutes per side until golden brown and cooked through.

Serving

    Plate and Serve

    On each plate, place a potato cake, top with the salmon, add roasted peppers and wilted greens on the side, drizzle with Bérnaise sauce, and garnish with crispy capers.
