Prepare the filling
In a skillet over medium heat, add the olive oil and diced pancetta. Cook until crispy. Remove from heat and allow to cool slightly. In a bowl, combine the cooked pancetta, sun-dried tomatoes, chèvre cheese, fresh basil, salt, and black pepper. Mix well.

Roll out the puff pastry
On a lightly floured surface, roll out the puff pastry sheet to smooth out any creases. Cut the pastry into a rectangle about 12x8 inches.

Spread the filling
Evenly spread the pancetta and cheese filling over the puff pastry rectangle, leaving a small border around the edges.

Roll and shape the palmiers
Starting from one long side, roll the pastry tightly towards the center. Repeat with the other side until both sides meet in the middle. Wrap in plastic wrap and chill for 30 minutes.

Slice and brush with egg wash
Preheat the oven to 200°C (400°F). Remove the chilled pastry log from the refrigerator and slice into 1/2 inch thick pieces. Arrange the slices on a baking sheet lined with parchment paper. In a small bowl, mix the beaten egg with water and brush the tops of the palmiers.
