Soup Base

Method

Soup Preparation

  1. 1

    Sauté the Onions

In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 25-30 minutes.

  2. 2

    Add Garlic and Broth

Add the minced garlic and sauté for 1 minute until fragrant. Stir in the beef broth, dry white wine, thyme, bay leaf, salt, and pepper. Bring to a simmer and cook for 20 minutes.

Assemble and Bake

  1. 3

    Prepare the Oven

Preheat your oven to 400°F (200°C).

  2. 4

    Prepare Bowls

Ladle the soup into oven-safe bowls. Place a slice of baguette on top of each bowl, then sprinkle with Gruyère and Parmesan cheese.

  3. 5

    Bake

Place the bowls on a baking sheet and bake in the preheated oven until the cheese is bubbly and golden, about 10-15 minutes.
