Salad Preparation

    Cook the Potatoes

    In a pot of salted boiling water, cook the fingerling potatoes until tender, about 15-20 minutes. Drain and let cool. Slice into halves.

    Prepare the Beans

    Blanch the haricots vert in boiling water for 2-3 minutes until bright green. Drain and immediately transfer to ice water to stop the cooking process. Drain again and set aside.

    Cook the Fish

    Grill or sear the fresh tuna or salmon over medium-high heat for about 3-4 minutes per side for medium-rare. Let rest for a few minutes before slicing.

    Hard-Boil the Eggs

    Place eggs in a pot and cover with cold water. Bring to a boil, then cover and remove from heat. Let sit for 10-12 minutes. Transfer to ice water, peel, and quarter.

    Assemble the Salad

    On a large serving platter, arrange the sliced fish, potatoes, haricots vert, halved radishes, cherry tomatoes, anchovy fillets, and quartered eggs. Drizzle with tapenade.

    In a small pan, heat oil over medium heat. Add drained capers and fry until crispy, about 2-3 minutes. Drain on paper towels.
